Our third day took us pretty much due south 36 miles from Pleasant Bay to a nice little cottage on the Cabot Trail in St. Joseph du Moine. A flat ride, except for the opening few miles, which featured 1,000 feet of steep climbing directly into a gale-force headwind. (Well, that’s what it felt like.) After that, we had some easy ups along the coast, then flat once we got south of Chéticamp, where we pedaled against the wind along a two-lane highway with thin or nonexistent shoulders and plenty of large buses and semis. Full concentration was needed, but we all made it safely to the Blue House.

Looking south. Chéticamp is around the bend in the distance.
Sunset from the porch at our cottage on the Trail at the end of Day 3.
That evening, we got a courtesy van ride a few miles up the road to Table Doucet, a lovely farm-to-table restaurant, offering a set nine-course menu and wine pairings. Before each course, the executive chef came out of the kitchen to tell us where the ingredients were sourced from and how they were prepared. The halibut, for example, was salted and let to rest for four days before being soaked in a broth made from the fish’s head and etc. etc. It was quite extraordinary.
